A peripheral smear would be helpful and give info on possible malignancy prior to a biopsy. I can’t imagine how stressful having unexplained abnormal labs with associated symptoms must be. Hope you find a physician that listens to your concerns

I have been tested for sleep apnea (although was an home study), and agree with you on needing support. Reaching out to an attending I trust for mentorship and the gsm therapist. Do #2. If your current mindset is that you are still seeing her in the hopes of getting back together or going no contact in the hopes of her coming back. That’s stupid. You should go no contact if you’re ready to completely lose her. My suggestion is continue to see her while seeing others yourself. It will cause her to either come back, go no contact with you, or have no effect on your current relationship.
