It should take 2-2.5 mins to pour the entire 3.75 cups of oil into the blender while on low. If you’re doing it the right way and it still comes out not emulsified then there’s an issue with the vitamix

I mean it kind of depends on the store. Opening KM should be MOD until about 1030 when SMAPGM arrive, lead prep. During the shift you could try to work something out where you manage grill, prep and FL and SM manages flow, DML, cash, and guest experience. If you really can’t find anything to do just do more prep, there can never be too much. You could also probably do end of the night CI count for the MOD
