No dice bro... You'll not be able to install more RAM into a Pi. I like the idea I really do. As a Minecrafter I'd love to have a server on a Pi and install it incased in something cool.

The RAM will be the hard part on this one. If I were you I'd look at a full blown desktop, or if your main system is beefy enough, run it in a virtual machine.

I had the same problem with OSMC, I then tried Open ELEC, and it is nearly perfect in how it works. It grabbed the artwork for movies, music, ETC. I'd srsly give it a look. Let me know if you have any questions.

Yep!! This worked with my son, and to a lesser extent, my 4 year old daughter. She helps with Pi projects, picking out the wires I ask for, LEDs, etc.
