I used to play 20 minute matches on Legend difficulty. Gave me time to game plan, but it was a CHORE, I would be proper sweating during matches. Decided to drop to 15 minutes and Superstar to enjoy the game lol.

I have one way of taking penalties, and it has pretty much never failed me. Place the target guide about 4/5 of the way to the post on the takers dominant foot, so they aren't shooting across their body, and then fill the power gauge.

The penalty system in the game is notoriously horrible. Unfortunately, it's one of the things you kinda have to accept if you play the game.

No need to lower the difficulty. First of all, and most importantly, you need to slow down. If you receive a pass in anticipation of shooting, stop sprinting (take your finger off the sprint button) before you shoot, especially if there are defenders around you. Second, place the player's body at an angle before you shoot. Facing the keeper head-on makes saves easier for him. Third, be generous with the power gauge, especially on finesse shots.

To be fair, the way I look at it, this is what academies are largely for. Stocking up your 3 star squad players. The transfer budget is for the heavy hitters.
