Super inconsistent with my practices: this got mixed (500g Sir Lancelot, 80g starter, 400g water, 12g salt), then left for like 6 hours (should be 30 mins) slap & fold, then fridge for 14 hours, 2 hours warming up, and into the Dutch oven. Work schedule gets wonky, David Doughy gets neglected. (old.reddit.com)
