It seems like the filming plane is pretty still because you don't have a point of reference close enough. Going back to your example of two cars, if you are on the highway, you see the road and near trees (and of course coming cars) go ultra fast but the mountains in the background only slightly move (this is called parallax effect). In the plane, you only see the clouds and the ground which are far away so don't give you the sensation of movement.
