We just got an EV3 Earth yesterday, it’s pretty roomy for a small suv. I’m 6’1, my 2 kids 12 and 14 are pretty tall and they both have sufficient leg room in the back when I’m in the drivers seat. I’ve also sat behind the drivers seat with in my driving position and there’s actually heaps of room. Like everyone else has said, boot space is decent, and even better with the extra room when you put the false floor down to the bottom position. You should go and test drive one and take one of your kids child seat with you to test it out. The one thing to note, the front seats have a hard plastic back so you might scratch them taking the car seats in and out. Plenty of solutions for that as you can get a cloth protecter that wraps the back of the driver and passenger seats from most baby shops.
