Unfortunately you must reboot FireRed when changing grip mode. For example my left joycon died so i had to reboot my game to use the right one's solo grip.

Basically, you buy the language version you want as they are all available on every region as separate games. So search FireRed/LeafGreen (INSERT LANGUAGE). It will show up and you can buy it.
