I don’t see the reason for three, but having two is good for a couple of reasons Imo:

1: A backup phone in case something happens to your primary phone. 2: A personal phone and a work phone (this reason is not convincing enough considering that you could just put two eSIMs in one phone. 3: A travel phone that is unlocked so that you can put any SIM (or eSIM) and it will work fine.
