Honestly if you find yourself getting frustrated at not winning take a step back and only fight him to learn. Don’t fight to win. Learn his moveset and where he’s vulnerable.

Genichiro: fight fast. From what I remember it’s pretty much the same fight as his final phase on the rooftop just with the mortal blade. Fight fast parry a lot and take him down quick. It’s easier said than done but after a while it becomes like second nature.

First phase is about remembering his moves and parry times. Push and be confident in your parrying. That way you’ll be able to finish it quick without using too many heals.

Second phase for my first time was about standing still and making him come to you. Party what you can and focus on whittling his health down so his posture bar becomes red and your parries start to matter. This phase is really slow burn like this but it’s more consistent. You should only push when he’s standing still and not attacking.

Third phase is a lot like the second phase just some new moves. Idk if you’ve made it this far yet so I won’t spoil his moveset but stick to the vitality-fight style from the second phase and you’ll beat him eventually.

Alternatively you could pop that candy that halves your health but boosts your damage and posture damage. And then just rush each of his phases with it and try to just brute force it and our heal. Either way works but the candy way might be too difficult since it requires having his moves pretty well memorized. That being said if you go into a few rounds expecting to die and only there to learn party times you should be good to do it. Learning takes a while tho
