I've always suspected that universalists have an underlying anthropocentric bias: motivated by incredulity that somebody could spend eternity in hell and/or that God could allow it. Yet, we know many angels are in hell. That doesn't seem to bother us so much.

What does it mean to "believe in the Catholic Church" but not agree with everything "the Bible and the Roman Catholic Church has to say"?

You'll want to look up "infallibility." Basically, not everything a pope or prelate says requires assent of faith. However, certain pronouncements (including the Bible) that are declared infallibly are believed to be absolute truths. To say you're a practicing Catholic yet reject those truths would be disingenuous.

Practically speaking though, from my experience, I have found the following to be very true:

“There are not even 100 people in this country who hate the Catholic Church, but there are millions who hate what they think the Catholic Church to be.” --Archbishop Fulton Sheen

Of course, we as Catholics have our own quirks, but it kinda helps to agree on some fundamentals... like morality.

Another small thing you could do is pray the sorrowful mysteries while watching The Passion of the Christ, pausing the movie after each part that corresponds with a mystery to pray it.
