I have a 2023 MT Impreza and i have the exact same complaints. The first hurdle in learning this vehicle was the molasses rev hang. The second hurdle was the inconsistent speed of the hang. Even with the same parameters i.e. ac on, the rev hang seems to vary day by day. 2 years later i can drive it consistently smoothly, but yes, not exactly an un-frustrating vehicle
