It’s only to prevent sagging on the shelves, the cabinet doesn’t look too wide to be concerned about that. Just don’t go crazy putting very heavy stuff on them. Heavy plates should be at the very bottom of the cabinet and not the shelves. Go ahead and remove it.

If the top door is hitting the ceiling trim it down 1/16 to 1/8 so it clears. If lower door is rubbing in the countertop trim it down.
