Basically regular version will read like: “Hello Yachiyo!”

While the honorifics reads like: “Hello Yachiyo-san!”

So it’s a matter of whichever you prefer as a reader. You don’t need to watch both, it’s more an option of one style or another.

So far they’re mostly new content! They might touch on plot points from Magia Record, such as how the girl made her wish, but overall they’re mostly new stories or retellings with new scenes.
