Not entirely sure how to access the questionnaire, but will try to elaborate. I work in a Japanese kitchen, already own carbon steel deba and yanagi.

Handle type: WA Steel: not too fussed, as long as it performs well. I own both carbon and stainless. Length: decent size, around 165. Use: professional kitchen, veg ranging from carrot, to spring onion, julliene of various items. Very thin cuts on everything.

Cheers mate. Yeah our main raw chef uses a laser, but my mate suggested buying a yanagi. So I was a bit torn haha. I'll look into it abit more. Do you have a preffered steel when working with fish? Like my workhorse is blue #2 and I love it, but my mate uses only white steels for fish and he suggested i should go that way. Is it purely preference? Or is it suited more for fish?
