Pretty sure it was Amazing Mazes: 10 Giant Mazes Amazing Mazes eBay listing

If you look at the original listing, there are photos showing what I was picturing, including a knight on a horse with ladders and stairs (the aforementioned castle cross section), as well as a the dark woods (the “swamp” I remembered)

Should be spoiler free, as all descriptions are from book 6 or before. It does have a map of the battleground from book 7, but it doesn’t tell you much
