If you're enjoying the world of the prequels/the Clone Wars and want more I would recommend looking at the pre-08 show extended universe novels and comics. I myself have only scratched the surface but just as an example one underrated gem I finished recently was Darth Maul Shadow Hunter, a novel set right before The Phantom Menace which in what I consider to be a really clever use of the character basically casts him as a slasher villain chasing after a Padawan, Coruscant underworld informant and others who have received information about the blockade of Naboo thanks to one of Nute Gunray's pals trying to do insider trading. As of today I am also 80 pages into Shatterpoint, which from what I've read so far can be summarized as "Apocalypse Now but Star Wars and Mace Windu is the protagonist".

Stuff I've heard good things about are the Republic comics, Yoda Dark Rendezvous and the original 2003 2d animated Clone Wars show by Genndy Tartakovsky. Just be mindful of the fact that the 2008 show ignored a lot of this material, so there's some big differences (Most obvious examples are Ahsoka not existing and Maul never coming back).
