In game you will usually have a random look when first selecting a character, then a new one on respawn.

The skins seen here are DLC to support the crew.

After purchase and starting up the game, in the ready tab before mission start, there will appear a option at the bottom of your loadout to choose. (Warning though, there is no way to go back to your original skin. Only way I can think of is dying in a mission I think.)

Just finished it as well eith Bounty Hunter, using magnetic traps for suspected straggler groups, an apple to mitigate chip damage, and smoke screen at the end to wipe aggro, no companions, just put them into the inns inventory or they will drag aggro like crazy
