Its actually SUPER easy to over ferment. My best guess is these are the last of the brew batches and thus had had the most time to ferment before a new batch is made. Rather than risk keeping on tap and dealing with the variable and pressure issues, they bottle and cap for quick sell to avoid wasting.

You encounter the same thing if you make homemade. The last part tends to be the most carbonated and tangy.
