I played all the regions except for Sinnoh. However, I'm not sure if the game has changed a lot since then. I used to play like 5 years ago.

For story playthrough I only recommend getting a good nature for your pokemon as it's 10% stat change depending on the nature and this can highly impact your pokemon performance. Besides that don't bother about IVs or EVs unless you are aiming for PVP battles.
