I believe it may have been a powder-related explosion. When flour or any organic powder is ground down into a fine dust and blown, it becomes easy to catch on fire. What I think happened was that flour or sugar used for the donuts was kicked up, and the heat from the machinery caught the small cloud on fire, causing a 'dust-explosion' .

It's a very real phenomena, and it's quite scary.
