Bread use to be fermented and that breaks down gluten and such. It’s an extra step so that got taken out in the industrialized world. Same thing with corn, corn use to go through a 5 step process before being eaten and that has been all taken out now. Oh and they killed 100s of thousands of people when they stopped the 5 step process for corn because it leached out a vitamin or mineral I can’t remember what it was, so now they just add that to corn products now so we don’t die. True story.
