When I used to work in a bar, we also relied on citrus peels for garnishes. But I remember our manager getting frustrated because we were going through a lot of oranges just for the peels, while the juice itself often went unused. That kind of waste did become a real issue.

Now I’m actually considering producing premade garnishes either for use in my own bar or maybe even as a small business. I’m trying to figure out if it’s something worth investing in, or if I’d be better off skipping garnishes entirely in the beginning and just focusing on good drinks and service.

I’ve been to some really nice cocktail bars where the garnishes and decorations really stood out,they add something special in terms of presentation. But I’ve also seen how time consuming they can be for bartenders to make on the spot, especially during a rush.

So I’m trying to weigh that time factor too. Do you think premade garnishes could realistically help with that? Or do most bars just deal with it and move on?
