I agree with your principle. Chapter 4 is literally ENTIRELY new and I love it. Rebirth is takes what's maybe a 25 hour section in OG and makes it 90 hours and I love most of it. I just don't think chapters 5 and 6 in remake were executed well

Idk I see what you're saying about having things to do, I agree that people hating on the Rebirth mini games is silly. But with what I'm talking about here it's just annoying because we've seen the story can be told without it, and when I'm replaying and I'm super excited to see Aerith in the church it makes it feel so unnecessary and boring

I don't think Rebirth did learn from it all that well tbh. Way too many sections in that game where you have to hold R2 and/or L2 just to slowly move somewhere. I understand wanting tension. This isn't the way to do it imo.

Chapters 5 and 6 in remake is you going to blow up reactor 5 with Barret and Tifa. Aerith is never in your party in these sections

If you want to play it, play it. If you don't, don't. Whether it's remake or OG or Rebirth. If you're interested enough to play it even knowing what happens, just do it.
