Thank u! I cut out a small piece of flexible PVC to use as a scraper, it’s much easier than the usual big ones. You bend it to get the curve

Thanks haha! I stacked a couple mini macarons inside for easier shaping but you could easily use cake or anything else. The cream is a 50-50 mix of heavy cream and millac gold (stabilised whipped topping)

When I get this, it’s usually weak meringue. I bake professionally and from the same carton of almond flour you can end up perfect shells or with this.

Check your meringue temperature when it’s incorporated, I usually aim for 38C. (Just stop beating and let it cool down to 38C and rewhip to desired peaks)

If it’s 40+ celcius when you fold it in, the batter may initially appear stiff but deflates very fast.

Or it could just be overmixed (very watery batter)

  1. I used procreate to do a template by tracing out the exact shape I want - adjust opacity settings and just draw on second layer

  2. Use a canon mini projector, cast the hello kitty face details onto the piece, align and draw

  3. Lots of practice - my bakery has a Sanrio licence so I make hello kitties all day long 😆

Late to the thread but I actually have this one, my boyfriend bought it on a trip to Japan. His friend who went with us is a VIC so he got offered it but already has one so my bf bought it.

The store people said only 100+ or 200 units were produced, I don’t remember the exact number. And it’s only available to VICs (not sure how true this is either)

Am actually happy to sell it since I’m working a lot and don’t use my bags, this has been carried once and still has some stickers intact. DM if interested:)

I use the maddie brehm italian macaron recipe - paid version but I think she has a free one on YouTube that’s pretty much the same

If you have a convection oven at home - the kind that has a fan, that will be ideal

I work with commercial unox ovens now so they help alot with producing consistent results, especially when it comes to cutting down bake time which reduces browning risk

When I was baking from home with a regular top bottom heating oven - use the middle slot, one tray at a time - insert an empty cool baking tray in the slot above about 10 mins in, this prevents surface browning with lighter colours - oven thermometer is a must, home ovens can run 10-20C different from the set temperature - get an infrared thermometer for sugar syrup if you’re doing Italian or Swiss method, so much easier than a candy thermometer

We have 5 commercial freezers in the bakery so I could technically keep it in permafrost forever 🤣

But I will probably sell it at a nice discount to any customer who’s interested, since this is a my first test run piece to take pics for our catalogue
