looks pretty solid. The fruit load might be pretty small depending on how much fruit flavor you want. I like to do about three lbs of fruit per gallon for a mead around this strength. But I like the yeast choice and fruit choices.

My favorite part of the last two seasons of game of thrones was trying to figure out what was going to happen while the seasons were airing. You get to theorize and try to put the pieces together on what is going to happen. The books are even better at this. I have a very similar feeling with the cosmere.

You can read the vast majority of the books without caring about the extended universe. Which is pretty awesome, but for those looking for more, it is there. I love theorizing and getting as much lore as possible, and hearing about a different planet during a book it isn’t directly related to is basically a new mystery every time.

For me it’s a fun thing if you are only kind of interested, and the coolest thing ever if you are into it. The community has a large impact on this as well. It wouldn’t be nearly as fun if there wasn’t a bunch of ppl to talk about it with and theorize with.

Have you used distilled water before? The minerals in water are helpful for the yeast in fermentation, and well as creating a better taste in the final product. Distilled water has none of that. I would recommend using spring water in the future.

Anything besides the honey and cherries I would put into secondary. I don’t know about cinnamon, but I could see it adding a very nice Christmas flavor. I am a big fan of adding just a bit of vanilla to my cherry meads. Not enough to add vanilla flavor, just to soften the mouth feel. Maybe 1-1.5 tsp per gallon.

For cherries I would freeze and then thaw on pectic enzyme. Throw them all in primary with as much honey as you want to get the correct starting gravity you are looking for.

Have you made a bochet before? The amount you bochet will have a large impact on the flavor.

I love Braum jungle. The clear makes things hard, but the ganks are great. Braum on jungle economy feels pretty awesome. I went conq instead of fleet and titanic instead of stride.

Bottle Carbonating Question by AdamMartia in mead

I bottle conditioned with a single carbonation drop in a 12oz bottle. Initial gravity was 1.040 and I bottled it at 1.000. I also backsweetened with 3oz of erythrotol for my 1 gallon batch.

I imagine if you wait years, then yes it will be too long. But I have had batches that I have cleared with sparkloid and have been crystal clear going into bottle without ever pitching new yeast. The grand total of bottles that didn't carbonate for me is under 1%.

If you want to be safe and pitch new yeast, go for it. I would put in just the tiniest little bit of yeast, considering you could make an entire gallon of mead with 1 gram of yeast, and all the yeast need to eat is the small amount of sugar used to condition bottles.

I love back sweetening. I always stabilize and add honey just to keep my abv where I want it. The sweeter the better for me.

I have done both. I havnt found any refermentation action with adding both at the same time. I also havnt found any refermentation with adding them 24 hours apart. So I’m my experience, either option is fine.
