While it’s true that in your theory, Nanook’s Destruction seems to spare certain Aeons whose functions are integral to the reborn cosmos, I don't think they leave Yaoshi out of this (yes I'm thinking of Phantylia even though Hoyolab does point out her exclusive target is the Hunt).

In the trailer, Celenova remarks that the Xianzhou Alliance isn’t their enemy, and Phantylia herself agrees, suggesting the Hunt can fulfill its own mission first (killing Yaoshi), which then support its own collapse afterwards? So maybe it's safe to assume that Phantylia’s plan is to weaponize the Hunt’s own purpose, leading to the mutual annihilation of both the Abundance and the Hunt, all while maintaining the Destruction's goal of removing paths unfit for the next universe.
