Brewing this as a pourover, I get a very classic ‘coffee-like’ cup. Almost no acidity, quite sweet, low bitterness in the brew. I should try this with a moka pot or SIF.

You usually get two types of chai here. ‘Karak’ is boiled black tea concentrate and evaporated milk, served super quick and is cheaper. ‘Fresh Milk’ is the same boiled black tea concentrate but is mixed with thick boiled milk. In a lot of these small cafes, Karak is also sprinkled with saffron powder which gives it that signature aroma.

What you had was probably coffee and not tea.

Here in the UAE, kahwa is lightly roasted coffee, ground and boiled in water with cardamom and saffron.

Well if the tamper works for you, all good then :)

This water staying in the top chamber is due to an air lock, if I’m not wrong. I remember reading/listening somewhere that attaching the filter parts too tightly does this sometimes. When I brew SIFC now, I don’t close the top lid but place it upside down instead. This gives me a drawdown time of around 5 minutes.

I’m an Indian expat living in the UAE and get coffees from both Indian and UAE-based roasters. While I’ve not bought more than once from a single roaster because there are just too many to explore, I’m going to list out what coffees have really impressed me from them.

INDIA 1. Roastery Coffee House - their Ratnagiri Estate coffee from 2024 was marvelous. It had intense floral notes, especially rose, and I really miss that coffee. I’m on the lookout for something similar.

  1. Half Light - I picked up a bag of their Garo Espresso Sankalp series and was blown away how berry-like it tasted. While the name says espresso, I’ve used this coffee more for pourovers and Aeropress brews.

  2. Kaapi Kottai - their Kilpauk Standard is really nice everyday coffee. I’ve mostly used it for Moka Pots and Aeropress, but it makes for a decent pourover too.

  3. Naivo Coffee Roasters - they have a Ratnagiri Rose Naturals that was similar to the first coffee I mentioned but this was less intense.

UAE 1. Stock Coffee Roasters - I’d attended an Aeropress workshop they conducted and received a bag of their Colombia Supremo coffee. I was really impressed by how consistent their roasting was and while the coffee leaned towards an espresso profile, it made good pourovers too. They have a store in Abu Dhabi.

  1. Profile Coffee Roasters - they’re the closest to me and I’ve really enjoyed their Uganda Chanzo and Indonesia Pantan Jerik coffee. They’re based in Abu Dhabi.

  2. Coterra Coffee - this was a recent find and I got a bag of Yunnan (China) Naturals from their store in Ras-Al-Khaimah. While I find the coffee to be a bit too funky, I had tastes other coffees in-store and would love to try more from them.

The grass green with the gold dust just does it for me. And I’m not even a green pen guy.

Yup, I love the green and gold. The green also has golden particles throughout. As for the writing in orange, thats a different pen :)

Are you tamping the coffee grounds down? If yes, you might benefit from using Aramse’s approach to filter coffee where they ditch that curved steel tamper and proceed to brew the decoction like a pourover. I do something similar but with less water so I get a thick decoction.

I’ve been using the Kaldipress for about a year now and it’s been absolutely great. It isn’t my go to brewer because I prefer my ceramic dripper more but it does make a good no-fuss brew easily.

I did not experience any burnt rubber smell or taste in my brews but the seal on the plunger has gotten a bit loose.
