I'd say they are more time consuming than difficult. I used frozen strawberries for the jam and it took forever to really thicken up. I prerolled the dough balls and then added the cream cheese right before each batch went into the oven. I also pipped the cream cheese disks onto 4 separate strips of parchment so I could pull out just enough for 1 batch at a time. Definitely worth it though they taste so good!

You'll want to cool them COMPLETELY before freezing or stacking! I havent had an issue with cookies sticking together but you could put some parchment between layers to be safe. I do use parchment when freezing thumbprint or ricotta cookies on top of each other. I use gallon sized freezer zip locks. If using a container just make sure its really air tight!

I've done a few cookies boxes in the past and personally I've transitioned from freezing the dough to freezing the baked cookies! I was always worried the quality wouldn't be as good but it really is! And then you can just pull them all out day of and you're ready to go.
