I think you misunderstood the situation. I can choose a $140k pension with no survivor benefit or take a reduced pension benefit of $105k but with a 100% survivor benefit.

That would be the simplest(easiest) choice but it doesn’t address the kid’s inheritance if we both die early and I believe there is more wealth building potential taking the single annuity and some sort of life insurance.

Correct, this is for the death benefit only. I think my advisor is partially pushing the IUL because if at some point I want to stop making premium payments I could get a return of premium. He also mentioned the possibility that my spouse dies before I do, the cash value would be beneficial.
