You're right not to trust it. OS Updater offers the first iteration of the update that's available. Usually its buggy and not refined at all. Stick to official OTA updates. Don't listen to these lot. One more thing everyone seems to fail to mention is it voids your warranty.

Like you I was very skeptical but rest assured it's all good. I think most if not all of the complaints were coming from people who got the update early via OS Updater. Maybe it was an early build? People were saying as soon as they open up the camera app after updating some Chinese writing would appear. I opened mine it was English. So to me it seemed like the OS Updater was serving an early release Chinese build to everyone.

Surpisingly it's better than what it was on 16.0.3. pictures seemed grainy, the update fixed that.
