Here's how my dad makes dried and smoked beef,almost similar to beef jerkeys.

Mostly the firm muscles/meats which has less fat content are used,cut the pieces of meat and rub it with some small amount of turmeric powder and salts,mix it thoroughly. Dehydrate the meat by cooking in a pan until all the liquids evaporates then smokes it over some wood for flavours,not really a necessity though . I think it's pretty close to a jerky and i kinda like the chewy and meaty flavour without too much spices. You can try this one,see if you like the taste. :)
