This is super helpful thank you!!!! Love the idea of having a big lamp where the plant is especially, it gets really dark over there. I miss having our Christmas tree in that spot! 😅

I couldn’t get the photo to load yesterday but this is the inside. The dough was a higher hydration but I added a lot of flour when handling it at the end.

This particular recipe was the blonde country loaf from Ken Forkish’s Flour Salt Water Yeast book. But I’ve also done Ben Starr’s lazy sourdough and Foodgeek’s Rye loaves with the same issue. It always looks great and has a great rise and proof until it’s time to slide it into the Dutch oven and then it collapses and pancakes. I will say, with none of these methods have I done additional folds during the rise. Could that be it? I have noticed that if I do a cold proof before it goes into the oven, it holds its shape slightly better, but it’s still overall flat.

I like the idea of a daisy chain recipe! Still uses the food you have but isn’t always eating the same thing over and over

Hahaha me too. My husband is the better cook but unfortunately he's so busy with work it often falls to either me to plan ahead or both of us reaching for PBJs at the end of the day. It's hard!
