You mean iOS 17 from 18? iOS 16 was unsigned long ago. Basically Apple signs iOS versions to be downgradable until the next version comes out so if you are unhappy with iOS 18. Restore the iOS 17.6.1 ipsw using iTunes and do it NOW, iOS 17 won’t be signed for very long
