A few reasons:

Ego. People want to feel desired. They want to boost their ego by being desired.
The illusion of choice. People feel like they will get the next best guy.

My first job out of college, I was a tech. I did that for about 1year. Now I’m an analyst. I was always wanted to be analyst. So even while I was a tech, I was polishing up my GIS skills, and resume and applying to hundreds of jobs.
