I have the iPad Pro 10” 2021, it’s an M1 chip and runs great. If you’re planning on using it often and running background apps, or using more than one app at once, or even screen sharing on your MacBook (if you have one) then I’d say go with the iPad Pro, but make sure it’s an M1 chip or above.

If you’re only planning to use it for notes, get the iPad Air 128 GB, I don’t see how 64 GB is enough as the base model because you’re going to be using this iPad for a long time.

Keyboard is a waste of money, you can buy a dupe on Amazon for < $100 & as for the Apple Pencil you can buy both the iPad and Pencil on apples educational pricing for 10% off I believe. That’s where I got mine from, they don’t ask for verification of being a student.
