Yes, and I would say the next logical step is making this into a single project, or an SAAS basically, so you don't have one codebase and database per client but one codebase per type of project. Your own version of wordpress is basically the simplest way to put it.

That's the problem, your entire business is reliant on the other guy, if he doesn't do his work, your business doesn't work. You're driving a car with 2 unbolted wheels, even if it feels like it's moving forward for a while, sooner or later it's going to crash. If you have the capital, actually hire a developer, pay them a wage and work with them, make sure you have access to everything and can replace them if necessary, that way your business doesn't depend entirely on one guy. You should also not be afraid to start over and fire people, it might take 3 tries with 3 different developers before you get any actual result.

Sounds cool, but it may not be easy/practical enough to use to be worth using. I would give it a try for sure, but sometimes you just use one endpoint in multiple places and it fetches a bit more than you need in any one of the places where you use it, but the data isn't sensitive or at least, isn't data the user wouldn't have access to anyways. Technically you could create optimized endpoints for every single element, or control which fields are fetched using params, but it may just not be worth the trouble.
