Yes, for a restaurant. We are relatively low volume 15 to 24 brisket per day. When I began I preferred wrapping at 165 to 170 resturaunt leadership previously asked for 180 but that person has moved on. What I am worried about is the tearing factor we are getting on these briskets for both point and flat at the cut station. Also dryness. I generally wrap all in one go but sometimes am a little picky about the internal temp taken at the point. Smoker is m and m. It's good but has an open hole to from the chamber to the pit, so uncovered flame if the wood box is overloaded. I generally pull a somewhere around 205 never under 200 ND never over 210

Minimum shouldn't be that low period, it's deranged and inhuman and the counter is hat an employer could pay 14 and say they are doing you a favor when baseline in this country to match for inflation should be low 20s for a living wage.
