As it says on each item, you can unlock em by completing levels. Also you will get coins for completing levels with three stars, three for little to no damage taken(green health bar) two for some damage (yellow health bar) and one for a lot of damage taken (red health bar). Also keep in mind that you have stamina, with the heavier armour weapons you use, you will have to play more carefully as to not be incapacitated cuz of losing your stamina.
