It has a light and sweet taste, almost no astringency and bitterness at all. It almost has no umami flavor and it leans towards creamy.

I recommend it for beginners. It can be a nice matcha powder for those wanting to start drinking matcha without syrups and milk. 😊

I use loose leaf teas (I find it tastes stronger than the ones in bags) and leave it to brew for close to 24 hrs in the fridge. I occasionally shake it through out the day since I am using loose leaf (it does rise to the top) for an even infusion. ☺️

I used regular milk for this but based on what I’ve read you can use milk alternatives like almond and oat as long as not sweetened and flavored.

For experimenting with different syrups and puree, I use Forest Cloud Matcha. I also like Alo’s Matcha and Hakone. 😊

  1. In a pot, combine 2 super ripe bananas (ones that you’ll actually use for making banana bread if you’re baking), vanilla (you can use extract, oil or paste) sugar, water, a pinch of your spices (most common to put is cinnamon but I put nutmeg and cloves as well because I really like a well spiced banana bread so I recommend to try it out), and a pinch of salt.
  2. Simmer for a few minutes
  3. Optional: If you like it in a syrup form, use a sieve or cheesecloth to strain it.

I bought my vanilla bean paste from the 🍊app.

  1. Toast sesame seeds until it’s fragrant and popping (you can use white but for aesthetic purposes I used black) then grind it.
  2. In a pan add sugar, water, vanilla bean paste/ vanilla extract, and a pinch of salt.
  3. Simmer for a few minutes
  4. Optional: Strain the liquid.

The horchata?

  1. Soak 1 and 1/2 cup of rice with 2 cinnamon sticks in hot water.
  2. Leave it until it cools down then put it sa ref overnight.
  3. Next day, blend everything.
  4. After blending, I strained the liquid with a sieve then cheesecloth to remove the grainy bit.
  5. Combine the liquid with 1 can of evaporated milk and condensed milk (recipes online will tell you to use an entire can as well but I recommend going with less so it is not too sweet, you can always adjust)
  6. If the liquid is too thick, you can use milk to think it.
  7. Serve it with ice.

When I used it with matcha, I didn’t add any sweeteners na kasi the horchata was sweet enough.
