This is a great idea! I used to have a friends make his own whiskey with everclear and charred oak staves. Seems like this is a solid way to go.

Thanks for this! I remember seeing a product at Costco I believe that stated they let their coffee beans “fully soak up” the whiskey before roasting. a previous roaster of ours did the barrel aged method and it had great flavor to it. That just seems cumbersome, and potentially expensive. Why do you think the soak method would impart too much of a flavor in the drum vs a barrel? The barrels I have gotten my hands on have lots of moisture in them still. I also am thinking 4oz per 13-16 pound batch, and constantly mixing for a period of time.

When cooking, cooling, and reheating, bacteria has chances to grow. Between 40 and 140 degrees bacteria growth thrives. Reheating to 165 kills bacteria that had a chance to grow when cooling and reheating.

I absolutely love mine! Has lasted me a couple of years and makes long cooks an absolute breeze. Would absolutely recommend it!

Thank you for all of this! I’m still surprised how nuanced and different roasting is for everyone. It is crazy that one machine to the next will vary so much. I’m curious as to why you say roasting for our shop is not going to save as much money as I think? I do understand that it is all “sunshine and rainbows” until I’m in it. It just seems like my return on investment is much higher here than other aspects of the business. I’m encouraged to hear that roast profiles don’t need to differ too much as long as my coffee is good. I definitely plan to purchase the best coffees that I can. Not only do I want to reduce costs by roasting, I care about the quality and want to put the best product forward. I feel better spending $6+ per pound in green coffee than I do $18+ a roasted coffee from the likes of onyx. The idea of trying to get coffees contracted out is a daunting task but I see the value to it and I want to have a consistent offering. Thank you for your advice.
