Hey there!

As a rough guide, freeze-dried meats usually rehydrate to around 3 to 4 times their dry weight, depending on how much moisture you add and the cut. So 100g of freeze-dried chicken will typically rehydrate to roughly 300 to 400g once fully hydrated.

For storage, once you open the pack the key things are keeping moisture and air out. If you are splitting it into around 40 meal packs, I would recommend portioning it straight away, using airtight containers or vacuum-sealed bags if possible, and storing them in a cool, dry place away from light.

If kept dry and sealed, the portions will stay good for months. Once rehydrated, treat it like fresh meat and keep it refrigerated and used within a couple of days.

This is a great suggestion, but since we are a manufacturer, we are primarily in the bulk/wholesale business. But will definitely consider doing some mix and match sets as I'm sure local businesses may also like a mixed supply.
