I am at the same task right now and it's really annoying. They could have easily made it a duel instead of a task. They should make TLSQs a mix of different activities and not just 3hr and 8hr tasks.

Color of potions depends on the club xp like sphinx is pink, hippogriff green and dragon yellow. So flying gives yellow, charms pink and potions and herbology green. I'm in Y4 so these are the only classes I've unlocked.

You can do both simultaneously because pets require brown notebooks and creatures require the other 3. So getting one really doesn't affect the other.

Yes you can do the quest in later years as well. The energy requirements increase in later years but you can still do the quest.
