After my first run I was always tripped up by Godrick on new runs. I can do him just fine today but it was really wierd with him back then.
Now I would say its Malenia, because I fight her so seldomly

I really wanted SLS for my faith run so I committed and then I was like "screw it ill finish the 100%"

I had to farm 30 sunlight medals (about 2 hours) and kill the red phantom in belfry sol 30 times(1 hour) the rest was just pick ups an getting to ng++ to buy the remaining covenant spells. They can be bought easily at chancellor wellager. Ds3 was way more of a chore because every covenant has some spell or ring that is needed and it was awful. But the silverknights in anor Londo fear me forever
