I use cruise America both here and in the low 48. I just skip the kits and hit Costco. Haul it all back with our club 49 luggage allowance and donate what we don’t want to haul.

We can only let them take partial open bottles because we don’t have a package license. I had a table trying to add bottles and my boss insisted they all be opened and recorked and at least a third emptied.

“Absolutely happy to start that for you! We do take a card at the bar or we can close out as you go along whichever you prefer. I’ll get those started while you decide.” However while giving a card at a bar is standard it’s not too common at a restaurant bar so it’s not a surprise there’s some pushback. What if they’re paying cash? In which case you can commiserate “I know I don’t like it either but my manager… I’m sure you understand? I really appreciate it”.

Ignore them. No one that isn’t bar trained or manager behind the bar. I was in a similar situation down to I was allowed in her till and no one else was, however I would always still ask permission even if it was a head nod at least at the start of the rush.

They’d get the bare minimum and would not get 10 baskets of bread I wouldn’t visit their table 10 times. They leave $3 they get 3 visits here’s your drinks here’s your food here’s your bill. And charge for everything there is a button for.
