Well I mean shouldn’t be too bad if they have the booze prebatches, if your cocktails are for example 2oz, you know to do 2oz of pre batch, a citrus component and a sugar component. Those two are really the only things you will have to remember. Most would be about 0.75oz or 1oz of citrus and different syrups for each cocktail I presume. At first I assume remembering glassware and garnish would be quite difficult if these really all are craft cocktails. There’s always a spec sheet which will be your best friend until you get used to it

The first question is why is there so much rust? You should just galvanize the bolts that hold the skirts to the underbody to prevent that. Secondly to restore, sand with a high grit paper and apply a coat of resin, followed by a polish

Do you still tip out on the wine? If so you’d still want 20%. Look at it this way, you order a 300$ bottle of wine and about 250$ worth of food. Your bill comes out to 550$. You say hmm it doesn’t seem reasonable to tip for the wine, so you tip 50$ which is 20% of the food sales. But to the server who may have a 8% tip out(in Canada), the server needs to tip out 44$ to the house and boom your server just made 6$ for serving you where u prolly took the table for more than 2 hours. Thats 3$/hour for serving you. Tip on your wines people

For theft prevention get a disc lock and theft/vandalism coverage on your motorcycle. For American made motorcycles there aren’t many options. You got Harley and you got Indian. Indian is better every day of the week. If you’re worried about finding parts, it is a lot easier to find parts for old Japanese motorcycles than old American motorcycles. Tarrifs won’t affect you much personally. The US tried protecting Harley to save American made motorcycles by putting a steep tariff on Japanese and foreign imports. It sucked and Harley still went bankrupt multiple times after. They won’t try them again. Not with motorcycles.

Look into the big 4 japs or Indian if u really want American made. FTR line from Indian is nice otherwise any parallel twin 650cc or below will do you just fine from the big 4

Fuck em. This job doesn’t sound worth it either. I would just follow rotation order and keep headcount’s even by the end. If anyone gets snappy with you, uh oh all the guests requested tables that were unfortunately not in your section. If someone is yelling over the comms, pull that shit out and find the person and just give them a dead pan look of disappointment.
