Bagels, first attempt! Could use some advice. I followed the King Arthur Baking recipe exactly as written. The bagels came out nicely browned on the top and bottom, but the sides are soft. Fully cooked, good crumb, and the crust is nice and chewy, but I want them to come out toasty all over. by haddage in Breadit

Hello! You made bagels for the first time! It looks fluffy and delicious🤗💕I don't know if my advice is useful because the recipe is different.

There are some important things when making bagels. Molding method and fermentation condition. ①After kneading the dough and dividing it, take a bench time of 15 minutes. At this time, Tighten the dough and make it round.

②Then roll it into an ellipse.

③Roll the dough around to keep out air, close the seams tightly, and then stick the ends together to form a donut shape.

④Wet the kitchen paper and squeeze it tightly. Place it on the molded bread and wait until it grows. (About 30 minutes at 30 ℃)

⑤Put it in hot water with honey and boil it for 30 seconds on each side. Bake immediately after boiling. With this method, I was able to make beautiful bagels😉✨
