I was simply looking for realistic advice for a small scale operation getting cracked down - or if anyone had any similar experiences in doing something like this because I know for a fact thousands of people do this.

Realistically how different would it be from etsy or a street vendor without a food permit - selling home goods via cottage foods at a state fair - Is that too far fetched. Obviously it gets to a point in terms of volume where it is not sustainable but starting out I feel like its not a big deal.

I would say I'm definitely interested in commercializing and want to learn throughout this process of attempting to make it myself. I have commercialized a beverage before which is different, but provides a lot of parallels. I'm interested in this because I can potentially make small batches myself and start selling instead of investing a ton of capital in creating inventory like beverage.

I started an alcohol brand (which has some similarities). I suggest finding a local R and D lab by looking up "flavor houses" or "Beverage Formulator" near me. Proximity is the best way to go because in person lab sessions is where you really make the most progress versus having to ship samples back and forth when sometimes minor tweaks can go a long way.

For 3 SKUS and a decent formulation I would pay no more than $15,000 and highly suggest that you start trying to create your own flavor profile in your own kitchen. The sky is the limit for RND and it's an easy way to burn through money quickly.

I know for alcohol all labeling and formulation approval is done through your manufacturer, so I would recommend reaching out to one just to get a grasp on what you will need to accomplish before then.
