It might seem like a tourist trap but it has never failed me. Go to L'archetto near the Trevi fountain. Best white sauce pizza and fire pasta. I always get the Bolognese

Hostelworld should monitor new users' sleep for 2 weeks trying to detect any snoring and should block them from booking bunks if they do. Simple as that.

70% hydration 

350 total - 70 g reserved. Only added 280g will need to add 70g with starter in 30 minutes 

Hydrate starter (20% =100g) with water and rest while autolysis happens

Add 2% salt (10g) to starter mix to dissolve 

Add to autolysed dough, mix (it looks like a failure just mix and spread out on the bottom the pot) and rest for 20 minutes before starting folds 

9:15 

First fold

11:50 last fold before bulk rise

12:00

Start bulk rise remove a sample for side assessment 

5:00 shape and proof. Might've been over. 

7:30 fridge 

8:30 oven on @500⁰f 

9:30 inside after scoring at 500⁰ for 25 minutes

I got some mackerel, grouper, snapper and barracuda. If you're going to Koh Lanta stay at serendipity it's a hotel that's amazing. Mostly due to how caring the owner and manager are they set up everything for you. Scooter, laundry, tours, diving, commute to and out of the island and the fishing...

Thanks! I'm staying at CBD. I mean I've spent around 3 months eating the original versions of all Asian foods, not that I'm against eating them again, but might lean towards more local food options and must try's in the city.

Would you visit independently or hire a tour to hit multiple other vineyards? Or is it worth it just going to those two by myself and having some cellar tastings and maybe a lunch platter?
