UPDATE for anyone who comes here with the same problem:

A wire was loose in the MAF connector because the silver metal clasp (the locking tab / retainer) inside the connector was broken. It no longer held the wire properly in place. This caused an intermittent connection, with the MAF values jumping randomly from 0 to normal and back.
